Fruit Crumble

This is a recipe I found in the Australian Women's Weekly Basic Cookbook.

Crumble can be prepared ready for cooking up to 2 days in advance, keep covered in refrigerator. Recipe unsuitable to freeze or microwave.

Ingredients:
2 large apples
1/2 cup dried mixed fruit
1 tablespoon water
1 tablespoon lemon juice
1/4 cup rolled oats
1 tablespoon coconut
2 tablespoons plain wholemeal flour
1/4 teaspoon ground cinnamon
30g butter

Instructions:

Peel, quarter, core and slice apples, combine in medium saucepan with fruit, water and juice. Bring to boil, reduce heat, cover, simmer for about 5 minutes or until apples are soft. Pour mixture into shallow oven proof dish (3 cup capacity).

2. Combine oats, coconut, flour and cinnamon in small bowl, rub in butter with fingertips until mixture is course and crumbly.

3. Sprinkle mixture evenly over fruit mixture, bake in moderate oven for about 30 minutes or until topping is golden brown.
Serves 2.
